Anago

Another gourmet food from Miyajima, anago is the word for saltwater eels. The eels can be prepared in several ways, for example, as tempura or as sushi. Most popular in Miyajima, however, is anago-meshi, a rice bowl topped with eel glazed in a sweet and sour sauce. This is considered a gourmet dish in Japan.
